Homemade Granola

Granola is good. It's good by itself. It's good in a bowl with milk. It's good mixed with yogurt and fruit. 

It's so versatile and I love making it at home because you know what's in it and you can make it however you like. I've bought it at the store before but it's just not as good as homemade and it has an "old" or "stale" taste to it. Blech! So, without further adieu here's the recipe I use, which has been adapted from Alton Brown's recipe. 

Granola 

Ingredients:
3 C rolled oats
2 C nuts (you can use all of 1 nut or a mixture of: chopped/slivered almonds, cashews, pecans, sunflower seeds, etc.) 

3/4 C shredded or flaked coconut
1/4 C plus 2 T coconut palm sugar

2 t cinnamon, optional (to taste...I didn't measure it when I put it in)
1/4 C plus 2 T maple syrup
1/4 C coconut oil, melted
3/4 t salt
1 cup dried fruit (raisins, craisins, apples, etc.), optional 

--- I don't like dried fruit in my granola but my kids and husband do so I make a separate batch for them.


Homemade Donuts

I love donuts BUT I don't love all the sugar and flour that goes into them so I have been trying to find paleo versions that are just as yummy. I've used 2 different recipes and have been happy with both. They are below, with my adaptations. The recipes are VERY different from each other but both turned out really good.

Mama & Kids and What We've Been Up To

It's the middle of January and I figured I needed to write a post about what my kids are into these days since I haven't done that in so long. Also I wanted to write about the things we've been up to because life looks different now that I'm a stay-at-home Mama.

Caden's List @ 3yrs, 10 mo and 16 days old:
1. Lego Duplos - he builds TONS of things (trains, airplanes, guns, helicopters, etc.)
2. Transformer Rescue Bots - the show and the toys. He's always asking me for more of the toys, "Mommy, can I get the Medix Rescue Bot for my birthday? Can I get the Fire Truck one for Christmas?"
3. TV Shows - his new faves are Octonauts and Little Einsteins
4. Watching Daddy play the "monkey" game on the iPad. I have no idea what this game is, it's kind of their "thing."
5. Playing Star Wars Angry Birds, or as he calls it, "red birds"
6. Singing or humming along with songs at home, in the car or at the store...and if he doesn't know the words he just makes them up. Sooo funny! 
7. Playing outside, even when it's cold and then coming in 2 minutes later because his hands are cold.
8. Playing with his friends and seeing them at church. 
9. We are working on listening and obeying skills and not telling his little sister what to do :)
10. Also, still working on ABC's and counting from 1-20. We've tried showing him how to write letters and draw certain things but he's just not ready yet.
11. Misses all of his family that doesn't live here and is always asking for people to come visit or if we can go on an airplane to Texas to see his cousins or on a drive to Pine (aka LaPine) to see Nana and Papa and Uncle Andrew.  
12. Being a good helper! (helping feed the dogs, let them out/in, putting dishes in the sink when he's done with them, helping clean up his toys...)

2012 is gone!

2012: A Year In Review

As I look back on 2012 I have many things to remember and be grateful for. I think the first one being that God allowed our family to live on 1 income, which allows me to be at home full-time with my kiddos. We have our good days and our bad days BUT I'm so thankful that I am here with them and I'm not having someone else take care of them during the day. Another thing I am grateful for is that we were able to travel and see lots of familiar faces and places, some new and old! 

Here's a snapshot of some of the things that happened in 2012: Lots of snow in January and Michael's trip to India, Mollie's last day of work in March (woohoo!), Caden's 3rd birthday, my nephew Holden was born, a trip to Seaside with some of our Texas family, a trip to Nashville for Michael's work conference, undertook a big backyard transformation, Emberly's 1st birthday and she started to walk!, a trip to Newport, celebrating my Grandma's birthday in Christmas Valley, Michael and I drove down to Sacramento, CA and went to Joshua Fest (Christian music festival, sooo fun!!) while Caden and Emberly got to hangout with Nana and Papa in LaPine, Harvest Jam at the church in place of trick-or-treating, spent Thanksgiving in Texas (Austin, Houston AND Galveston), and brought the year to a close with Christmas at home in Scappoose.

I know I could go back through my blogs and see all of these things but it's nice to see everything listed out in 1 place. Yes, I like lists! :) Sorry, if this is a boring post. It's mainly a place for me to reflect and take a walk down 2012 memory lane. I hope that you all had a wonderful year and are looking forward to what 2013 holds. Love!

Homemade Potato Chips

I found this recipe in one of my cooking magazines and had to try it. I LOVE sweet potatoes and every time I try to make sweet potato fries or chips in the oven, some always end up burned, while others are mushy and not. crispy. at. all. I was a little skeptical at first because I don't ever use my microwave to cook anything (mostly to defrost or warm things up) BUT this worked great! 

Recipe -
Washed regular and/or sweet potatoes (as many as you want to make)
Olive Oil
Salt

Directions -
1. Slice potatoes really thin (I used my mandolin slicer on the thinnest setting).


2. Place potatoes in a bowl and add enough olive oil (couple tablespoons) and salt (to taste) to coat.

Dr Checkups and Upcoming Events

Both of the kids had their Well-Baby/Child checkups today and did great! 
  • Caden was in the 91% for weight and 95% for height. 
  • Emberly was 65% for weight and 75% for height. 
They're both growing like crazy!

Can't believe July is almost over....we have a birthday party for Michael, my Grandma's birthday party and a music festival to look forward to (among other things) in the next month or so.
