Homemade Potato Chips

I found this recipe in one of my cooking magazines and had to try it. I LOVE sweet potatoes and every time I try to make sweet potato fries or chips in the oven, some always end up burned, while others are mushy and not. crispy. at. all. I was a little skeptical at first because I don't ever use my microwave to cook anything (mostly to defrost or warm things up) BUT this worked great! 

Recipe -
Washed regular and/or sweet potatoes (as many as you want to make)
Olive Oil
Salt

Directions -
1. Slice potatoes really thin (I used my mandolin slicer on the thinnest setting).


2. Place potatoes in a bowl and add enough olive oil (couple tablespoons) and salt (to taste) to coat.


 
3. Place a piece of parchment paper on a microwaveable plate and lay the potatoes out in a single layer.
4. Cook on high in microwave for 4 minutes*, or until they start to turn brown.
5. Let cool for a few minutes before eating. 


*Note: I used 2 potatoes (1 red bliss and 1 sweet potato) and made 5 batches. By the third batch I had to cook the potatoes for 1-2 minutes more than at first and then I had to wipe out the inside of my microwave because the moisture from the potatoes was collecting on the inside. 

~The only thing I would do differently next time is probably to find a bigger plate to cook them on so I don't have to do as many batches.
